Regional Hawker Showcase at Raffles Courtyard

Spanning four instalments from July to October 2024,  look forward to our collaboration with hawker food authority Makansutra, as we unveil beloved Southeast Asian specialties that are rarely found in Singapore and present the culinary heroes behind them.

2 to 8 October 2024

The Regional Hawker Showcase will conclude with the last instalment from 2 to 8 October 2024 with Mr. Jeffry Sie from Bandung, Indonesia. His specialty dish of Gudeg is a Javanese delicacy deeply rooted in the city’s rich history and dating back to the 1500s as a modest meal.

This unique dish features a hearty slow-cooked stew, carefully prepared with young unripe jackfruit, simmered for hours with over 25 spices and ingredients such as, blue ginger, lemongrass, shallots garlic, candlenut, coriander seeds, Indonesian bay leaves, palm sugar and coconut milk, and covered with teak leaves during the simmering process, yielding a tantalising amalgamation of aromatic sweetness and spice.

The scrumptious stew is served atop fragrant jasmine rice, accompanied with succulent braised-then-fried chicken, hard-boiled egg, beef skin puff that have been cooked in soto, a traditional Indonesian soup and tofu.
