Established in 1896 as a recreation space and nestled in one of the most storied parts of the iconic Raffles Hotel Singapore, the evolved Bar & Billiard Room (BBR) of today continues to shine as a social space offering an authentic and tantalising taste of Italy while showcasing the inspirations of our Chef de Cuisine Natalino Ambra. Born in Sicily famed for its seafood and raised in Tuscany in Florence, where its meats are world-renowned, Chef Natalino’s culinary philosophy is a well-balanced one that is produce-driven and designed to bring out the natural tastes and flavours of every ingredient.

Enjoy Chef Natalino’s approach to Italian cuisine at BBR amidst a storied building to discover tales of Singapore’s last tiger while immersing in the charming heritage of the century-old locale framed by tall signature Raffles Victorian columns, French doors and original floor tiles juxtaposed with contemporary design elements at three distinct areas- the inviting bar, vibrant dining space, and balmy al fresco terrace with a vantage view of the cast iron Palm Fountain.

Casual Chic.

Gentlemen are encouraged to wear collared shirts and trousers with appropriate footwear and dress shorts will be allowed during lunch. Ladies may be dressed in dresses, skirts or trousers with appropriate footwear. Slip-ons and flip-flops are not permitted.

About Chef de Cuisine
Natalino Ambra is Chef de Cuisine at Bar & Billiard Room, Raffles Hotel Singapore, starting from July 2022. The talented chef brings with him more than 15 years of culinary experience gleaned at renowned restaurants across the world. Born in Prato, Italy, Ambra developed a strong interest in cooking at a young age, dabbling in the kitchen from the age of seven. To realise his dream of turning his passion into a lifelong career, Ambra embarked on a culinary diploma in Montecatini when he was 18 and gained valuable experiences at a traditional Tuscany restaurant whilst studying.
